Sítio da Torre is a family-owned property in Carmo de Minas, a small town in Minas Gerais State, the most respected coffee production “terroir” in Brazil. Located in the “Water Circuit of Minas Gerais”, which is internationally recognized for its high-quality mineral water springs, our farm is placed in a mountain scenery with extraordinary climate conditions. Our plantations produce in altitudes from 1,100 to 1,300 meters and singular conditions to grow the best coffees in the world. We are the 4th generation of a coffee grower family. We have improved planting, harvesting and, mainly, post-harvesting techniques. Our property has 65 hectares, with 45 exclusively dedicated to grow coffees.
The connection between Sítio da Torre and coffee began in the late 19th century, when Antônio Coli migrated from Italy to Brazil in search of a better life and soon became involved in agriculture, buying land in the region, which is now known as Carmo de Minas, and planting the first coffee trees for their own consumption. The land passed from father to son and then to grandchildren. Among them was Paulo Coli, who from a very young age learned to work as a farmer, cattle breeding and horses, and after some time decided to invest in a small coffee farm that existed on his land. Over the years, Paulo Coli divided his lands among his seven children. In an effort to expand and improve coffee production, four of the seven brothers came together, bought the rest, and founded the Sítio da Torre. The four siblings, Álvaro Antônio Pereira Coli, Marisa Coli Noronha, Lilian Tereza Coli Garcia and Maria Elisa Coli Franqueira, together with their respective spouses, who were in love with the coffee culture, realized that this soil was capable of producing very special beans, a true "mountain black gold." At that time the culture of the specialty coffees was not diffused in Brazil, everything was sold like "commodity". The extreme dedication and constant search for improvements in the planting, harvesting and post-harvesting processes brought much recognition to Sítio da Torre, contributing to the name of the small town of Carmo de Minas on the map of the best specialty coffees in the world. And now this coffee made with lots of passion can come to you!

The beans are taken from the trees to the patio, where they can be washed, washed and pulped, or just placed in the patio (natural coffee), always drying by the sun at “drying patios” (tracked lots).
Then the green beans goes to the “rotary dryer” until it reaches 11.5% humidity.
They are stored in the “rest roons” for about 30 days.
After this process, the beans goes to COCARIVE`S Green House, where each lot is meticulously analyzed by Coffee Experts.
